A friend of mine once told me that some of the recipes I make are far from "Jewish"- but hey, I'm from the Deep South....and Southern food sure tastes awesome (Jewish food, or not)! My home-state of Georgia is home to one of the sweetest varieties of onion known as the Vidalia onion ( grown where else, but Vidalia, GA?!) And let me tell you: they sure make an awesome dairy kugel when combined with rich, buttery Ritz snack crackers and Parmesan and mozzarella cheeses. In honor of Chanukah, I give you Southern dairy goodness. y'all come back now, ye' hear?
Preheat oven to 325° F.
In a large frying pan/skillet, saute the onions with the butter for 15-20 minutes, over a medium flame. Gently beat the eggs into the onions and mix until well incorporated. Spoon half of the onions into a lightly greased 7 1/2 x 12 casserole dish. Top with the snack crackers and 1/2 of the Parmesan cheese. Top with the remaining onions, followed by more crackers and cheese. Generously sprinkle mozzarella cheese on top. Bake, uncovered, for 30 minutes.
